A stylish black and white tzatziki cake that is a refreshing and impressive dessert, delighting both the taste buds and the eyes. Preparation Time: 1 hour + chilling time
Serving Size: 8-10 servings
Ingredients:
- 200 g Digestive biscuits
- 100 g butter
- 400 g Greek yogurt
- 200 g cream cheese
- 2 tbsp honey
- 1/2 dl lemon juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 2 dl cream
- 1 dl black olive puree (for garnish)
- Fresh mint (for garnish)
Instructions:
1. Crush the biscuits and melt the butter. Mix the biscuit crumbs with the melted butter.
2. Press the biscuit mixture firmly into the bottom of a springform pan.
3. In a bowl, combine the yogurt, cream cheese, honey, lemon juice, garlic powder, and salt until smooth.
4. Whip the cream until soft peaks form and gently fold it into the yogurt mixture.
5. Pour the mixture over the biscuit base and smooth the top.
6. Allow the cake to chill in the refrigerator for at least 4 hours or overnight.
7. Before serving, garnish the cake with black olive puree and fresh mint.
