Mussels in White Wine Chili-Tomato Sauce

A warm and delicious mussel dish that brings flavor and warmth to a winter evening. Preparation time: approximately 30 minutes.
Serving size: 4 servings
Ingredients:
- 1 kg mussels - 2 tbsp oil
- 2 shallots
- 1 garlic clove
- 2 tomatoes
- 3 cm piece of red chili
- 1/2 tsp salt
- 2 dl dry white wine
- 1 dl heavy cream
- 1 tbsp chives
- pinch of black pepper
- additionally, fresh crusty bread
Instructions:
1. Rinse and check the mussels; discard any dead or damaged ones. 2. Peel and finely chop the shallots and garlic.
3. Sauté the shallots and garlic in oil in a pot or large skillet.
4. Dice the tomatoes and chop the chili, then add them to the pan. Cook the mixture for a few minutes.
5. Pour in the white wine and season with salt. Allow it to boil.
6. Add the mussels to the pan and cover tightly with a lid. Cook for 3-4 minutes, shaking the pot occasionally.
7. Check the mussels for doneness and stir gently. Do not overcook.
8. Use a slotted spoon to transfer the cooked mussels to a bowl.
9. Pour the cream into the mussel cooking liquid and simmer for a couple of minutes. Season with chives and black pepper.
10. Taste the broth for saltiness and add more salt if needed.
11. Divide the broth among the mussel bowls and serve immediately with fresh bread and a good white wine.
