Delicious lemon cheesecake served with sweet strawberry sauce. Perfect for summer celebrations or coffee gatherings.

Serving Size: 8-10 servings

Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 400 g quark or cream cheese
- 1 dl sugar
- 2 eggs
- 2 dl cream
- Juice and zest of 2 lemons
- 1 tsp vanilla sugar
- 500 g fresh strawberries
- 1 dl sugar (for strawberry sauce)

Instructions:

1. Crumble the digestive biscuits and mix with melted butter. Press the mixture into the base of a pie dish.
2. In a mixing bowl, whisk together the quark, sugar, eggs, cream, lemon juice and zest, and vanilla sugar until smooth.
3. Pour the filling over the biscuit base and bake at 175°C (350°F) for about 30-40 minutes, or until the filling is set.
4. Allow the cheesecake to cool to room temperature, then transfer to the refrigerator.
5. Prepare the strawberry sauce by blending the strawberries and sugar in a blender until smooth.
6. Serve the lemon cheesecake with the strawberry sauce on top.
