Ingredients:
- 300 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt and black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Reserve 1 cup of the cooking water. 2. Chop the bacon or pancetta into small pieces and fry in a pan over medium heat until crispy.
3. Peel and finely chop the garlic. Add it to the pan with the bacon and cook for another minute until slightly softened.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
5. Drain the pasta and mix it with the bacon and garlic mixture. Remove the pan from heat.
6. Quickly add the egg and cheese mixture to the pasta, stirring swiftly to cook the eggs gently with the residual heat. Add reserved cooking water as needed to achieve desired consistency.
7. Serve immediately with fresh parsley, if desired.
