Ingredients:
- 300 g pasta (such as spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt and black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain, reserving a little cooking water.
2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the bacon and sauté for one more minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
5. Add the cooked pasta to the skillet with the bacon and garlic. Mix well.
6. Remove the skillet from the heat and pour the egg mixture over the pasta. Quickly stir to combine, allowing the eggs to cook slightly without scrambling. If needed, add a bit of reserved cooking water to make the sauce creamy.
7. Serve immediately and garnish with fresh parsley.
