A delicious creamy pasta with spinach sauce that is quick and easy to prepare, perfect for a weekday dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute until golden.
3. Add fresh spinach to the skillet and cook until wilted.
4. Pour the cream into the spinach and mix well. Allow the sauce to heat through but do not boil.
5. Stir in the grated Parmesan cheese until melted into the sauce. Season with salt and black pepper to taste.
6. Add the cooked pasta to the sauce and mix thoroughly. If the sauce is too thick, add a little reserved cooking water.
7. Serve the pasta immediately, garnished with fresh basil if desired.
