Ingredients:
- 250 g pasta (e.g., spaghetti)
- 100 g bacon or guanciale
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, heat olive oil in a frying pan over medium heat and add the bacon. Cook until crispy.
3. In a bowl, whisk together the eggs and mix in the grated Parmesan cheese. Add salt and black pepper to taste.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water. Add the pasta to the pan with the bacon.
5. Remove the pan from heat and quickly mix the pasta with the egg mixture to prevent the sauce from cooking too much. If needed, add a little reserved cooking water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
