Ingredients:
- 400 g spaghetti - 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.2. Meanwhile, heat a skillet over medium heat and cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a little cooking water. Add the pasta to the skillet with the bacon and garlic.
5. Remove the skillet from the heat and pour the egg mixture over the pasta. Stir quickly to lightly cook the eggs with the heat of the pasta. Add reserved cooking water as needed until creamy.
6. Serve immediately, garnished with fresh parsley.
