This quick and delicious avocado spinach pasta is the perfect weeknight meal, packed with vitamin E and flavor. Preparation takes only ten minutes!

Ingredients:

- 200 g pasta (e.g., spaghetti or fusilli)
- 1 ripe avocado
- 100 g fresh spinach
- 1 garlic clove
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Parmesan cheese (optional)

Instructions:

1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the pasta cooking water.
2. Meanwhile, peel and chop the avocado. Place the avocado, spinach, garlic, olive oil, and lemon juice in a blender.
3. Blend the ingredients into a smooth paste. Add reserved pasta cooking water as needed to reach desired consistency.
4. Mix the avocado-spinach blend with the cooked pasta. Season with salt and pepper.
5. Serve immediately and optionally top with Parmesan cheese.
