Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Drain the pasta, reserving a bit of the cooking water.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until softened.
3. Add the fresh spinach to the skillet and cook until wilted.
4. Pour in the heavy cream and stir well. Let it simmer on low heat for a few minutes.
5. Add the cooked pasta to the sauce and mix well. If the sauce is too thick, add a little reserved cooking water.
6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
7. Serve immediately, garnished with fresh basil if desired.
