These fluffy vegan snack cookies are the perfect treat to keep hunger at bay while balancing sugar levels. Easy to make at home, you can use seeds and fruits you already have in your pantry. Preparation Time: 45 minutes
Serving Size: About 12 cookies
Ingredients:
- 200 g vegan margarine - 1½ dl cane sugar
- 4½ dl all-purpose flour
- 2 tsp No Egg (or 1 tsp baking powder + 1 tsp baking soda + 1 tsp vinegar)
- 2 tsp vanilla sugar
- 2 tsp dark cocoa powder
- 2 tbsp syrup
- ½ dl pumpkin seeds
- ½ dl raisins
- 2 tbsp sesame seeds
- 2 tbsp sunflower seeds
- 2 tbsp flaxseeds
- 25 g dark chocolate, chopped
- A pinch of salt
- Water (if needed)
Instructions:
1. In a food processor, blend room temperature margarine and cane sugar until creamy.2. Gradually add the other ingredients one by one until a dough forms. If the dough feels dry, add a tablespoon of water.
3. Shape the dough into a ball and let it rest in the refrigerator for at least 15 minutes.
4. Preheat the oven to 175°C (350°F).
5. Shape the dough into your desired cookie shapes or logs.
6. Sprinkle seeds on top of the dough and gently press them in.
7. Bake the cookies in the middle of the oven for about 10 minutes.
