Ingredients:
- 250 g pasta (e.g. spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain, reserving about 100 ml of the cooking water.
2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the pan and sauté for an additional minute.
4. In a bowl, whisk together the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
5. Add the cooked pasta to the skillet with the bacon and garlic. Remove the pan from the heat and quickly stir in the egg mixture, adding a little reserved pasta water if needed to create a creamy sauce.
6. Serve immediately, garnished with fresh parsley.
