Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 3 egg yolks
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the crushed garlic to the skillet and sauté for one more minute.
4. In a bowl, whisk together the egg yolks and Parmesan cheese. Stir in a little pasta cooking water to prevent clumping.
5. Drain the pasta and add it to the skillet with the bacon and garlic. Mix well.
6. Quickly add the yolk-cheese mixture to the pasta and stir to combine, allowing the heat to slightly cook the yolks without scrambling them.
7. Season with salt and black pepper to taste. Serve immediately with fresh parsley on top.
