Ingredients:

- 2 eggs
- 1 avocado
- 2 slices of whole grain bread
- 1 tomato
- Salt and pepper to taste
- Fresh basil or parsley (optional)
- Olive oil (optional)

Instructions:

1. Boil the eggs to your desired doneness (about 6-8 minutes).
2. Toast the whole grain bread slices.
3. Cut the avocado in half, remove the pit, and mash the avocado with a fork. Season with salt and pepper.
4. Slice the tomato into rounds.
5. Once the bread is toasted, spread the mashed avocado on top.
6. Add the sliced tomatoes and peeled eggs on top of the avocado spread.
7. Garnish with fresh herbs and drizzle with olive oil if desired.
