A classic Italian Pasta Carbonara, full of flavor and quickly prepared. Perfect for a weeknight dinner or to enjoy with friends. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200 g spaghetti
- 100 g bacon or guanciale
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. Drain the pasta, reserving a bit of the cooking water.
2. In a frying pan over medium heat, heat the olive oil and add the bacon. Cook until the bacon is crispy.
3. In a bowl, crack the eggs and whisk them lightly. Add the grated Parmesan cheese and mix well. Season with salt and black pepper.
4. Combine the cooked pasta with the bacon in the pan and mix. Remove the pan from heat.
5. Pour the egg mixture over the pasta and stir quickly until the sauce becomes creamy. If the sauce is too thick, add a little reserved cooking water as needed.
6. Serve immediately, garnished with fresh parsley if desired.
