Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine) - 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a bit of the cooking water. 2. Meanwhile, fry the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and cook for another minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Add the drained pasta to the pan with the bacon and garlic. Toss to combine well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta. Stir rapidly to ensure the eggs cook slightly but do not turn into scrambled eggs. If needed, add a bit of reserved cooking water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
