Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 ml heavy cream
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta according to package instructions in plenty of salted water until al dente.
2. Chop the bacon or pancetta and cook it in a skillet over medium heat until crispy.
3. Meanwhile, in a bowl, whisk together the eggs, cream, grated Parmesan cheese, salt, and black pepper.
4. Drain the pasta, reserving a cup of pasta water.
5. Add the hot pasta to the skillet with the bacon and mix well.
6. Remove the skillet from heat and quickly add the egg mixture to the pasta, stirring rapidly to prevent the eggs from scrambling.
7. If needed, add reserved pasta water to achieve a creamy consistency.
8. Serve immediately, garnished with fresh parsley if desired.
