Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Be careful not to overcook the pasta.
2. Meanwhile, heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the skillet and sauté for another minute until golden brown.
4. In a bowl, whisk the eggs and add the grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the skillet with the bacon and garlic.
6. Remove the skillet from heat and stir in the egg mixture. Add a little reserved pasta water if needed to create a creamy sauce.
7. Serve immediately with fresh parsley on top and additional Parmesan cheese if desired.
