Ingredients:

- 1 kg moose roast
- 1 kg wild boar ground meat (or other game meat)
- 100 ml Jack Daniel’s whiskey
- 2 cloves garlic, crushed
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 teaspoon salt
- ½ teaspoon cracked black pepper
- Fresh thyme, chopped
- Sweet potatoes
- Olive oil
- Homemade grill seasoning
- 1 jar sour cream
- ½ tablespoon Dijon mustard
- ½ tablespoon honey
- Extra whiskey
- Additional salt and pepper

Instructions:

1. Prepare the BBQ smoker and light it up. Use Jack Daniel’s whiskey barrel smoking chips. Add crushed garlic and bay leaves to the water pan.
2. Trim the moose roast of any silverskin and make incisions in the wild boar sausage casings. Ensure the meat and sausages are not cold from the refrigerator.
3. Make the wild boar whiskey sausage by mixing ground meat, whiskey, garlic, brown sugar, soy sauce, salt, pepper, and thyme. Stuff the sausage casings.
4. Cut the sweet potatoes into wedges and parboil them in salted water for about 15 minutes.
5. Prepare the whiskey sour cream by mixing sour cream, Dijon mustard, honey, whiskey, thyme, salt, and pepper.
6. When the internal temperature of the moose roast reaches 58°C (136°F), add some fresh smoking chips to the smoker. Remove the meat from the smoker, season with salt and pepper, and wrap it in foil to rest.
7. Brush the sweet potato wedges with olive oil and season with grill seasoning. Grill the sweet potatoes until crispy on the outside.
8. Quickly grill the wild boar sausages until crispy.
9. Serve the dish with a slice of moose roast, wild boar sausage, sweet potatoes, and a generous dollop of whiskey sour cream.
