Ingredients

- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1/2 cup white wine
- 3.5 tablespoons butter
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish

Instructions

1. Heat the vegetable broth in a saucepan and keep it warm.
2. In a large skillet, melt the butter over medium heat. Add the chopped onion and crushed garlic, sautéing until soft.
3. Stir in the Arborio rice and cook for about 2 minutes, stirring until the rice is slightly translucent.
4. Pour in the white wine and stir until it is mostly absorbed by the rice.
5. Add the warm vegetable broth one ladle at a time, stirring constantly. Only add the next ladle when the previous one has been absorbed.
6. Continue this process until the rice is al dente and the texture is creamy, about 18-20 minutes.
7. Remove the risotto from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
8. Serve immediately, garnished with fresh herbs.
