Ingredients:

- 500 g beef (stew meat)
- 2 tbsp olive oil
- 1 onion (finely chopped)
- 3 garlic cloves (crushed)
- 2 carrots (sliced)
- 2 potatoes (diced)
- 100 ml red wine
- 400 ml beef broth
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste

Instructions:

1. Heat olive oil in a large pot over medium heat.
2. Add the beef and brown it on all sides.
3. Add the onion and garlic; sauté until soft.
4. Stir in the carrots and potatoes, mixing well.
5. Pour the red wine into the pot and let it simmer for about 5 minutes.
6. Add the beef broth, bay leaf, and thyme. Season with salt and pepper.
7. Allow the stew to simmer gently with the lid on for about 40-50 minutes, until the meat is tender.
8. Remove the bay leaf before serving and enjoy the stew with fresh bread.
