French-Style Potato Salad

A refreshing and delicious potato salad, perfect for summer meals or as a side dish for grilled foods. Preparation Time: 30 minutes
Serving Size: 6-8
Ingredients:
- 8 firm potatoes
- 3 shallots
- 20 cm piece of leek
- 1 fresh cucumber
- 4 pickles
- 1 tart apple
- 2 tablespoons capers
- 3 tablespoons vinegar
Dressing:
- 400 ml mayonnaise
- 1 tub sour cream
- 1 tablespoon strong mustard
- 1 clove garlic
- A pinch of salt
- White pepper to taste
Instructions:
1. Boil the potatoes with their skins in salted water until tender. Allow to cool and then peel them.
2. Dice the cooled potatoes, fresh cucumber, and tart apple.
3. Finely chop the shallots and leek.
4. Add all diced and chopped ingredients to a large bowl.
5. Add the capers and vinegar to the bowl.
6. Mix the dressing ingredients together: mayonnaise, sour cream, mustard, crushed garlic, salt, and white pepper.
7. Pour the dressing over the potatoes and other ingredients, and stir carefully.
8. Allow the salad to chill in the refrigerator for about 30 minutes before serving.
