A delicious recipe that brings a smoky flavor to duck breast, perfect for a festive meal or weekend indulgence.

Ingredients:
- 2 duck breasts
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon Mesquite smoking chips
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- Fresh herbs (such as rosemary or thyme) for garnish
Instructions:
1. Prepare the duck breasts: score the skin in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.
2. Heat a smoker box or grill and add the Mesquite smoking chips to allow them to start smoking.
3. Heat olive oil in a skillet over medium heat. Place the duck breasts skin side down in the pan and sear for about 6-8 minutes until the skin is crispy and golden brown.
4. Flip the duck breasts over and transfer the skillet to the smoker box or grill. Smoke the duck breasts for about 30-40 minutes, or until the internal temperature reaches 65-70 degrees Celsius (149-158 degrees Fahrenheit).
5. Remove the duck breasts from the smoker and let them rest for 10 minutes.
6. In a bowl, mix the honey and balsamic vinegar. Slice the duck breasts and serve with the honey-balsamic mixture. Garnish with fresh herbs.
