Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 g mushrooms (e.g., button or portobello)
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes.
4. Add the mushrooms to the skillet and cook until they are soft and slightly browned, about 5-7 minutes.
5. Add fresh spinach to the skillet and cook until wilted.
6. Pour in the cream, mix well, and season with salt and black pepper. Let the sauce simmer on low heat for about 5 minutes.
7. Add the cooked pasta to the sauce and mix thoroughly.
8. Serve immediately, optionally topped with grated Parmesan cheese.
