Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook spaghetti in salted water according to package instructions until al dente.
2. Cut bacon into small cubes and fry in a pan over medium heat until crispy. Add crushed garlic cloves to the pan and sauté for an additional minute.
3. In a bowl, whisk together eggs and Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is ready, drain it, reserving a bit of the cooking water. Add the pasta to the pan with bacon and mix well.
5. Remove the pan from the heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs do not scramble, creating a delicious sauce. Add a bit of reserved cooking water if needed to make the sauce creamy.
6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese on top.
