This delightful spiced lingonberry cake combines warm spices with the tartness of lingonberries, making it a perfect treat for any occasion.
Ingredients:
- 4½ dl all-purpose flour
- 3 dl brown sugar
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 2 tsp ground cloves
- 2 tsp baking soda
- 1 tsp salt
- 2 dl milk
- 1 dl oil
- 2 eggs
- 2 dl lingonberries
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a large bowl, mix together the flour, brown sugar, ginger, cinnamon, cloves, baking soda, and salt.
3. Add the milk, oil, and eggs to the dry ingredients and mix until combined into a smooth batter.
4. Gently fold in the lingonberries.
5. Pour the batter into a greased cake pan.
6. Bake in the oven for about 40-50 minutes, or until the cake is cooked through (check with a toothpick).
7. Allow the cake to cool before serving.
