Berry Cinnamon Cheesecake

A delightful and creamy cheesecake infused with cinnamon and topped with mixed berries. Preparation Time: 20 minutes (plus chilling time)
Serving Size: 8 servings
Ingredients:
- 200 g cream cheese
- 3-4 dl heavy cream
- 6 gelatin sheets
- ½ dl Hermesetas sweetener
- Vanilla extract to taste
- 1 packet frozen mixed berries (raspberries, etc.)
Instructions:
1. Soak the gelatin sheets in cold water for about 10 minutes.
2. Whip the heavy cream until soft peaks form.
3. In a bowl, combine the cream cheese, Hermesetas sweetener, and vanilla extract until smooth.
4. Heat a small portion of the whipped cream in a saucepan and dissolve the gelatin sheets in it.
5. Mix the melted gelatin-cream into the cream cheese mixture and stir well.
6. Gently fold in the remaining whipped cream.
7. Pour the mixture into a greased cake pan and smooth the top.
8. Top with frozen mixed berries.
9. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
10. Serve chilled and enjoy!
