Ingredients:
- 200 g green olives - 200 g black olives
- 2 garlic cloves, sliced
- Zest of 1 lemon
- 1/2 dl olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh rosemary or thyme (optional)
Instructions:
1. In a bowl, combine the olives, garlic, lemon zest, olive oil, and balsamic vinegar. 2. Add the oregano, salt, and pepper. Mix well.
3. Allow the marinade to sit in the refrigerator for at least 30 minutes before serving, so the flavors can infuse into the olives.
4. Serve after marinating with bread or on a tapas platter. You can also garnish with fresh herbs.
