Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 cloves garlic (minced)
- Salt and black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain, reserving a bit of the cooking water.
2. Heat a skillet over medium heat and cook the bacon or pancetta until crispy. Add the minced garlic to the skillet and sauté for another minute.
3. In a bowl, crack the eggs and whisk them lightly. Stir in the grated Parmesan cheese until well combined.
4. Combine the cooked pasta with the bacon and garlic in the skillet. Remove the skillet from the heat.
5. Quickly add the egg mixture to the pasta and toss to combine. If needed, add a little reserved cooking water to make the sauce creamy.
6. Season with salt and black pepper to taste.
7. Serve immediately, garnished with fresh parsley if desired.
