A delightful and visually stunning dessert that combines sweet pineapple and light meringue, perfect for summer celebrations or as a refreshing treat.
Preparation Time: 30 minutes + 1 hour cooling
Serving Size: 4-6 servings

Ingredients:

- 2 fresh pineapples
- 4-6 cups frozen strawberries or raspberries
- 1 cup lemon juice or light liqueur
- 3 egg whites
- 6 tablespoons sugar
- 1 teaspoon vanilla sugar

Instructions:

1. Peel and chop the fresh pineapples. Remove the core and cut the fruit into small pieces.
2. In a large bowl, mix the pineapple pieces with the frozen strawberries or raspberries. Add the lemon juice or light liqueur and stir well. Let the fruit mixture marinate for a while.
3. Whip the egg whites until stiff peaks form. Gradually add the sugar while whipping until the mixture is glossy and firm. Finally, gently fold in the vanilla sugar.
4. Take an ovenproof dish and pour the fruit mixture into the bottom. Spread the meringue mixture evenly over the fruits.
5. Bake the meringue at 100°C (212°F) for about 1 hour, until the surface is beautifully colored and the meringue is firm. Allow to cool before serving.
