Ingredients:
- 2 eggs- 1 dl sugar
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1 tsp ginger
- 1 tsp vanilla sugar
- 1/2 dl oil
- 1 dl milk
- 1 can of pineapple chunks (about 400 g)
Instructions:
1. Preheat the oven to 175°C (350°F).2. In a bowl, whisk the eggs and sugar until light and fluffy.
3. Add the oil and milk to the mixture and mix well.
4. In another bowl, combine the dry ingredients (flour, baking powder, ginger, and vanilla sugar).
5. Gradually mix the dry ingredients into the egg mixture until smooth.
6. Gently fold the drained pineapple chunks into the batter.
7. Pour the batter into a greased cake pan.
8. Bake in the oven for about 30-35 minutes, or until the cake is golden brown and cooked through (check doneness by inserting a toothpick).
9. Allow to cool before serving.
