Ingredients:
- 400 g frozen cod - 100 g almond flour
- 1 dl breadcrumbs
- 2 eggs
- Juice of 1 lemon
- 2 tbsp oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Thaw the frozen cod at room temperature and pat dry with paper towels. 2. In a bowl, crack the eggs and add lemon juice. Whisk well to combine.
3. In another bowl, mix the almond flour and breadcrumbs. Season with salt and pepper.
4. Dip the cod first into the egg mixture, then into the almond-breadcrumb mixture, ensuring the fillets are well-coated.
5. Heat oil in a frying pan over medium heat and fry the fish fillets on both sides until golden brown, about 4-5 minutes per side.
6. Transfer the fish to a plate and garnish with fresh parsley before serving.
