Ingredients:
- 300 g pasta (e.g., penne or spaghetti) - 200 g fresh spinach
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.2. Chop the onion and garlic. Heat olive oil in a skillet and add the onions. Sauté until they are soft.
3. Add the fresh spinach to the skillet and cook until wilted.
4. Pour the heavy cream into the skillet and mix well. Let the sauce simmer on low heat for a few minutes.
5. Add the grated Parmesan cheese to the sauce and stir until the cheese melts.
6. Combine the cooked pasta with the sauce. Add reserved cooking water if needed to achieve the desired consistency.
7. Season with salt and pepper to taste. Serve immediately.
