A delicious and visually appealing almond-crusted pike, easily prepared in the oven. Perfect for a treat for four servings.

Ingredients:
- 2 pieces / about 600 g pike fillets
- 2 tablespoons ground almonds
- 20 whole almonds, chopped
- 2 teaspoons dried basil
- Zest of half a (blood) grapefruit
- A pinch of cayenne pepper or chili
- 2 mm salt
- 2 mm pepper
- 2 mm paprika powder
- 1 egg yolk
Instructions:
1. Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
2. In a bowl, mix together the ground almonds, chopped almonds, basil, grapefruit zest, cayenne pepper, salt, pepper, and paprika powder.
3. Place the pike fillets in a baking dish.
4. Brush the fish fillets with the egg yolk.
5. Sprinkle and spread the almond mixture over the fish fillets.
6. Bake in the oven for about 20 minutes or until the fish is cooked through and the crust is beautifully golden brown.
