Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 3 egg yolks
- 1 whole egg
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Chop the bacon or guanciale into small pieces and cook in a pan over medium heat until crispy. Add the crushed garlic cloves and sauté for an additional minute.
3. In a bowl, whisk together the egg yolks and whole egg. Stir in the grated Parmesan cheese until well combined.
4. Once the pasta is ready, drain it, reserving a bit of the cooking water. Add the pasta to the pan with the bacon and mix well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring rapidly to prevent the eggs from scrambling. If needed, add a little reserved cooking water to create a creamy sauce.
6. Season with salt and black pepper to taste.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
