Ingredients:
- 250 g pasta (e.g., spaghetti or fettuccine)
- 100 g bacon or pancetta
- 2 eggs
- 50 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Cut the bacon or pancetta into small pieces and cook in a pan until golden brown.
3. Add minced garlic to the pan and sauté for another minute.
4. In a bowl, whisk together the eggs and add the grated Parmesan cheese. Season the mixture with salt and black pepper.
5. Once the pasta is ready, drain it and reserve a little cooking water.
6. Add the hot pasta to the pan with bacon and garlic. Remove the pan from heat.
7. Pour the egg mixture over the pasta and quickly stir to avoid scrambling the eggs. If the mixture is too thick, add a little reserved pasta water to achieve a creamy consistency.
8. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
