Ingredients:
- 300 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale
- 2 eggs
- 100 g Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Chop the bacon or guanciale into small pieces and sauté in a pan over medium heat until crispy.
3. Add minced garlic to the bacon and cook for another minute.
4. Whisk the eggs and mix in grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it and save a bit of the cooking water.
6. Add the pasta to the bacon-garlic mixture and remove the pan from heat.
7. Pour the egg mixture over the pasta and quickly stir to cook the eggs with the pasta's heat, creating a creamy sauce. Add reserved cooking water if the sauce is too thick.
8. Serve immediately topped with additional grated Parmesan cheese and fresh parsley if desired.
