Delicious turkey sandwiches combining the flavors of turkey, red onion, arugula, and sweet mango chutney. A perfect choice for lunch or a snack!

Ingredients:

- 4 slices of bread (e.g., ciabatta or rye)
- 200 g sliced cooked turkey
- 1 red onion, thinly sliced
- 1 cup arugula
- 100 g mango chutney (see recipe below)

Mango Chutney:

- 2 onions, finely chopped
- 5 mangoes, peeled and diced
- 3 tablespoons grated fresh ginger
- 1.8 dl white wine vinegar
- 2.4 dl brown sugar
- 1/2 teaspoon ground cloves
- 2.4 dl raisins

Instructions:

1. Prepare the mango chutney: Combine all chutney ingredients in a large saucepan. Add water if needed. Bring to a boil, then reduce heat to simmer. Cook for about 40 minutes until thick and chutney-like. Jar the chutney in clean jars.
2. Lightly toast the slices of bread.
3. Spread mango chutney on the toasted bread slices.
4. Layer sliced turkey, red onion, and arugula on top.
5. Top with another slice of bread and serve immediately.
