A colorful and flavorful vegetable stir-fry, perfect as a side dish or light main course. Packed with healthy vegetables and complemented by a delicious mango chutney sauce. Preparation Time: 30 minutes

Ingredients:
- 1 red onion - 2-3 garlic cloves
- About 4 cm piece of grated ginger
- About 100 g mushrooms
- 1 bell pepper
- About 150 g sugar snap peas
- About 300 g zucchini
- Half a bunch of chopped basil
- Pine nuts to taste
- 2 tablespoons mango chutney
- Juice of 0.5 lime
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- Chili powder (Chili Explosion) to taste
- Olive oil for frying
Instructions:
1. Chop the red onion and garlic into small pieces. Grate the ginger. Slice the mushrooms, zucchini, and bell pepper. 2. Sauté the red onion, garlic, and ginger in olive oil until fragrant.
3. Add the remaining ingredients to the pan and cook lightly until everything is tender but still crisp (al dente), stirring occasionally.
4. Prepare the sauce by mixing lime juice and mango chutney. Add salt, black pepper, and chili powder. Mix well.
5. Pour the sauce over the vegetables and serve immediately.
