Ingredients:
- 300 g spaghetti
- 150 g bacon or guanciale
- 3 egg yolks
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions.
2. Chop the bacon or guanciale into small cubes and fry in a pan over medium heat until crispy.
3. Add the minced garlic to the pan and sauté for an additional minute.
4. In a bowl, whisk together the egg yolks and grated Parmesan cheese, adding salt and black pepper.
5. Once the spaghetti is cooked, drain it, reserving about 1 cup of the cooking water.
6. Add the spaghetti to the pan with the bacon and garlic. Mix well.
7. Remove the pan from the heat and quickly add the egg mixture, stirring to prevent the eggs from scrambling.
8. Add reserved cooking water as needed until the mixture becomes creamy.
9. Serve immediately, garnished with fresh parsley if desired.
