Ingredients:
- 1 cup blackcurrants (frozen)
- 1 ripe mango
- 1 cup strawberries
- 4 tablespoons chopped pecans
- ½ cup all-purpose flour
- 1 cup rolled oats
- 5 tablespoons sugar
- 3.5 tablespoons soft butter
- Vanilla sauce or vanilla ice cream for serving
Instructions:
1. First, prepare the crumble topping: combine flour, rolled oats, chopped pecans, and sugar in a bowl. Rub in the soft butter until the mixture resembles coarse crumbs.
2. Peel and dice the mango into small cubes. Remove the stems from the strawberries and cut them in half.
3. In four individual baking dishes, layer the blackcurrants at the bottom, followed by the mango cubes, and then the halved strawberries on top.
4. Sprinkle an even layer of crumble topping over the fruit mixture.
5. Bake in the oven at 180°C (350°F) for about 40-45 minutes or until golden brown.
6. Allow to cool for 10-15 minutes before serving.
7. Serve with vanilla ice cream or sauce for an extra treat.
