This delicious mandarin pie is quick to prepare and adds sweetness to every bite. Perfect as a dessert or for coffee gatherings.

Serving Size: 8 servings
Ingredients:
- 200 g crushed cookies
- 100 g melted butter
- 400 g cream cheese
- 100 g sugar
- 2 dl heavy cream
- 3 mandarins (peeled and chopped)
- 2 tbsp lemon juice
- 1 tsp vanilla sugar
Instructions:
1. Combine crushed cookies and melted butter in a bowl. Press the mixture evenly into the bottom of a pie dish to form a crust.
2. In a separate bowl, beat the cream cheese and sugar together until smooth.
3. Add the heavy cream, lemon juice, and vanilla sugar to the cream cheese mixture. Gently mix until combined.
4. Fold in the chopped mandarin pieces carefully.
5. Pour the filling over the cookie crust and smooth the top.
6. Allow the pie to chill in the refrigerator for at least 2 hours before serving.
