A traditional Finnish meat pie filled with pork, spices, and a creamy potato-fennel mash.
Preparation Time: 4 hours (includes cooking and resting time)
Serving Size: 6-8 servings
Ingredients:
- 1 kg pork belly or pork neck
- 1 red chili
- 10 g ginger
- 7 cloves garlic
- 1 large onion
- 2 tsp salt
- Black pepper to taste
- 1 dl soy sauce
- 2 dl dark beer
- 3 dl water
- 1 packet of bacon
Rye Crust:
- 7 dl cold water
- 50 g butter
- 14 dl rye flour
- 6 dl all-purpose flour
- 1 tbsp salt
Fennel-Potato Mash:
- 5-6 potatoes
- 100 g fennel
- 2 tbsp butter
- Milk (as needed)
- Salt to taste
Instructions:
1. Let the pork come to room temperature. Rub the surface generously with salt and pepper. Place the meat in a baking dish with the skin side down.
2. Chop the garlic, ginger, chili, and onion. Add them to the baking dish.
3. Pour the soy sauce, water, and beer into the baking dish. Bake at 175°C (350°F) for about 1 hour.
4. Flip the meat skin side up, cover with foil, and braise at 150°C (300°F) for about 2 hours, basting occasionally with the cooking liquid.
5. Chop the meat into small pieces and return it to the broth. Heat for another 20 minutes.
6. In a bowl, mix cold water with rye flour, all-purpose flour, and salt. Add melted butter and knead into a smooth dough. Refrigerate for a while.
7. Peel and chop the fennel. Boil the potatoes and fennel in salted water until soft. Mash them together, adding butter, milk, salt, and pepper to taste.
8. Roll out the dough to about 0.5-1 cm thick. Place bacon slices in the center, add the pork, and top with the fennel-potato mash.
9. Shape the pie, sealing the edges well, and place it seam side down on a baking sheet lined with parchment paper.
10. Bake at 250°C (480°F) for about 30 minutes, brushing with butter every 10 minutes. Reduce the temperature to 200°C (390°F) and bake for an additional 10-15 minutes.
11. Brush the top with butter and wrap in foil for a few minutes before serving.
