Ingredients:

- 500 g rye flour
- 200 ml warm water
- 10 g salt
- 7 g dry yeast
- 1 tbsp honey
- 2 tbsp olive oil
- 1 tbsp seeds (e.g., sunflower or flax seeds)

Instructions:

1. In a bowl, mix together the rye flour, salt, and seeds.
2. Dissolve the dry yeast and honey in warm water. Let it sit for about 10 minutes until bubbly.
3. Add the yeast mixture to the flour mixture and stir. Then, add the olive oil and knead the dough for about 10 minutes until elastic.
4. Cover the dough with a cloth and let it rise in a warm place for about 1 hour or until doubled in size.
5. Shape the dough into a loaf and place it on a baking sheet lined with parchment paper. Let it rise again for 30 minutes.
6. Preheat the oven to 220°C (428°F). Bake the bread for about 30-35 minutes until golden brown and sounds hollow when tapped.
7. Allow the bread to cool before slicing, and enjoy with butter or cheese.
