Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon. Cook until crispy, then add minced garlic and sauté for an additional minute.
3. In a bowl, crack the eggs and whisk lightly. Stir in the grated Parmesan, salt, and black pepper.
4. Once the spaghetti is cooked, drain it, reserving a little cooking water. Add the spaghetti to the skillet with the bacon and garlic.
5. Remove the skillet from heat and pour the egg mixture over the spaghetti. Quickly toss to combine, ensuring the eggs don’t scramble. Add reserved cooking water as needed for a creamy sauce.
6. Serve immediately, garnished with fresh parsley if desired.
