A creamy and comforting potato-leek soup, perfect for chilly days.

Ingredients:
- 500 g potatoes
- 1 leek
- 1 onion
- 1 liter vegetable broth
- 200 ml cream
- Salt to taste
- Black pepper to taste
- Butter for sautéing
Instructions:
1. Peel and chop the potatoes into small pieces.
2. Slice the leek and onion into thin rings.
3. In a pot, melt some butter and sauté the onion and leek until softened.
4. Add the chopped potatoes to the pot and stir to combine.
5. Pour in the vegetable broth and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
6. Use an immersion blender or a regular blender to puree the soup until smooth.
7. Stir in the cream and season with salt and black pepper. Heat through once more.
8. Serve the soup warm, garnished with fresh herbs if desired.
