Savory Spinach-Feta Muffins

Delicious and hearty muffins, perfect for breakfast or a snack. The combination of spinach and feta adds wonderful flavor and nutrition. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 200 g fresh spinach
- 150 g feta cheese
- 2 dl milk
- 2 eggs
- 4 dl all-purpose flour
- 1 dl olive oil
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl grated Parmesan cheese (optional)
Instructions:
1. Preheat the oven to 200°C (392°F) and prepare your muffin tin.
2. Rinse the spinach and sauté it in a pan until wilted. Allow to cool and then chop finely.
3. In a bowl, mix together the milk, eggs, and olive oil. Add the cooled spinach and crumbled feta cheese.
4. In another bowl, combine the all-purpose flour, baking powder, salt, and black pepper.
5. Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
6. Spoon the batter into the muffin tin and sprinkle grated Parmesan cheese on top if using.
7. Bake in the oven for 20-25 minutes or until the muffins are golden brown and cooked through.
8. Allow to cool slightly before serving.
