Ingredients:
- 400 g pasta (spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Reserve about 1 cup of the pasta water and drain the pasta.
2. In a skillet over medium heat, cook the bacon or pancetta until crispy. Remove from heat and set aside.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
4. Add the cooked pasta to the hot skillet with the bacon. Toss well to combine.
5. Pour the egg mixture over the pasta and quickly stir to ensure the eggs cook but do not scramble.
6. Add reserved pasta water as needed to achieve desired consistency.
7. Serve immediately, garnished with fresh parsley if desired.
