Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy. Add minced garlic and sauté for a moment.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is done, drain it and reserve a bit of the cooking water. Add the pasta to the skillet with the bacon and mix well.
5. Remove the skillet from heat and add the egg mixture to the pasta. Stir quickly to cook the eggs slightly without scrambling them. If needed, add a little reserved pasta water for a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
