Serving Size: 4 servings
Ingredients:
- 250 g cooked lupini beans
- 300 g pasta (such as spaghetti or penne)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 100 g cherry tomatoes (halved)
- 100 g fresh spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (for serving)
Instructions:
1. Cook the pasta in salted water according to package instructions and drain.
2. Heat olive oil in a large skillet over medium heat.
3. Add minced garlic and sauté for about a minute until fragrant.
4. Add the lupini beans and cherry tomatoes to the skillet and cook for 5 minutes.
5. Stir in the fresh spinach and cook until wilted.
6. Combine the cooked pasta with the mixture in the skillet and toss everything together.
7. Season with salt and pepper to taste.
8. Serve the pasta topped with grated Parmesan cheese.
